Lemon-Herb Probiotic Chicken
Ingredients:
- 4 Boneless, skinless chicken breasts
- 1 Cup plain unsweetened yogurt (preferably Greek or Coconut yogurt with live cultures for probiotic boost)
- 2 Tablespoons extra virgin olive oil
- 3 cloves of garlic, minced
- Juice and zest of 1 lemon
- 1 Teaspoon ground turmeric (anti-inflammatory)
- 1 Teaspoon ground ginger (soothes digestion)
- 1 Teaspoon dried oregano (supports gut health)
- 1 Teaspoon fresh thyme (or ½ teaspoon dried thyme)
- ½ Teaspoon ground cumin (promotes digestion)
- 1 Teaspoon sea salt
- ½ Teaspoon black pepper
- Fresh parsley or cilantro for garnish
Instructions:
Prepare the Marinade:
- In a large bowl, mix yogurt, olive oil, garlic, lemon juice and zest.
- Add turmeric, ginger, oregano, thyme, cumin, salt and pepper. Stir well.
Marinate the Chicken:
- Place the chicken breast in the bowl, ensuring they are fully coated with the marinade.
- Cover and refrigerate for at lease 2 hours. (or overnight for maximum probiotic infusion and flavor).
Cook the Chicken:
- Preheat your oven to 375℉(190℃) or prepare a grill on medium heat.
- If using the oven, place the chicken breasts in a baking dish, cover with foil, and bake for 25-30 minutes, or until the internal temperature reaches 165℉(74℃).
- If grilling, cook for about 6-8 minutes on each side, depending on the thickness, until fully cooked.
Garnish and Serve:
- Garnish with fresh parsley or cilantro before serving.
- Pair with gut-friendly sides like steamed asparagus, fermented vegetables (sauerkraut or kimchi), or a leafy green salad with apple cider vinegar dressing.
